The update and rerelease of Pokémon Café Mix as Pokémon Café ReMix also includes an extensive overhaul of the staff system. As a result, the way in which Pokémon are recruited and leveled up is much more different than before.
Level progression
In Pokémon Café ReMix, Staff Pokémon gain Experience Points by completing orders. Normal orders will only give 10 EXP upon completion whereas training orders can give them a lot more. Staff Pokémon can gain a maximum of 20 levels.

Pokémon Cookies are a new item that was introduced in Pokémon Café ReMix and are used to increase the Max Level of a Staff Pokémon. A Pokémon's Max Level can only be increased upon reaching their current limit after which no more experience can be earned until several Pokémon Cookies and Golden acorns are spent to increase their Max Level. The type of Pokémon Cookie that is earned after a successful order corresponds to the species of the customer that made the order (i.e. serving a Charmander will earn Charmander Cookies). Only 23 Pokémon Cookies can be kept for each Staff Pokémon. After reaching Level 20 with a Staff Pokémon, Milestone Cookies are earned instead from their corresponding customer Pokémon.

Tarts have also been changed to give EXP and come in different flavors. Medium tarts will give 200 EXP while Large Tarts will give 1000 EXP. Extra Large Tarts were added in the 2/20/2022 update which give 5000 EXP.

Offerings
The way in which Offerings are invented and Pokémon are recruited has also been changed. Instead of reaching a certain order, some of the Staff Pokémon must reach a certain level to come up with a new Offering. And after the new Offering has been made, it will attract new Pokémon to visit the Café.

Special gimmicks
Special gimmicks are skills that are designed to counteract certain gimmicks that are present in an order which allows Staff Pokémon to deal with them more easily. Staff Pokémon can learn up to three special gimmicks and improve them further by reaching certain levels. When a combo link is being made with icons of the leading Staff Pokémon, gimmicks that they are specialized in dealing with are highlighted with a blue outline.
